Pesto Baked Pasta
You won’t be disappointed you made this. This is a recipe that I usually make for anyone who needs a meal or had a baby or anything like that. Even kids like it. It’s super easy and very delicious. I first had this dish in Kansas City when you could go in to one of those places and make a ton of meals and walk out and stock your kitchen with ready-made meals. Have you been? It was so convenient and you could leave out things you know your family didn’t like or add in extras. So we walked away with this meatless dish and wasn’t very excited about it until our family baked it and we all devoured the entire pan. I then went on a mission to figure out how to make it and to write a recipe for it. So I’m here today to pass on this treasure to you. Enjoy!
Pesto Baked Pasta
- 1 box penne or any noodles
- 1 jar of good red sauce
- 2 cups cottage cheese or ricotta
- 1/4 cup pesto (or more)
- 2 cups Mozzarella cheese
- 1 cup Parmesan cheese
Mix cheeses and pesto in a separate bowl and set aside.
Boil and cook noodles.
Spread 1/2 of noodles on bottom of pan. Put a 1/2 of red sauce on top of noodles. Spread entire cheese/pesto mixture on noodles and sauce. Place the rest of noodles on top of cheese/pesto mixture. Pour the rest of the red sauce on top. Sprinkle with more mozzarella cheese.
Bake at 350℉ for 45 minutes to 1 hour (until bubbling).
Tip: Use more pesto it adds so much flavor
Tip: I generously salt my water before boiling the noodles
