Strawberry Pie 🍓

 



April always reminds me of this incredible pie. My dad and sister share a birthday and my mom makes them each their own strawberry pie. This pie really works when you have delicious fresh strawberries that are in season! The crust is not scary to make. It’s a cookie crust and pulls it all together. Growing up we would throw a tub of whip topping on the counter to top it with however I am a purest and I don’t think it needs anything else. 


INGREDIENTS

Crust:

  • 1 stick of butter
  • 3 1/2 Tablespoons of powdered sugar
  • 1 cup flour

Filling:

  • 1-2 lbs Fresh Strawberries

Sauce:

  • 1 cup water 
  • 1 cup sugar
  • 3 T cornstarch
  • 3 T strawberry jello

 

Mix ingredients for the crust, press into a pie pan and bake 350 for 15-20 minutes. Let cool completely. 

Wash, cut and dry strawberries and set aside.

In a sauce pan, combine water, sugar and cornstarch. Mix well and stir on medium heat until mixture boils and turns clear. Remove from heat and add Jell-O, combine well. Pour mixture over strawberries and layer in pie crust. Alternate strawberries with mixture ending with sauce. Refrigerate until set and cool, about 4 hours.
