Lemon Blueberry Scones



The first time I had a 4 AM party to watch one of the royal weddings, a friend of mine brought these over.

I was Forever changed. 

These are so delicious. My son Neil and I love them so much!

They remind me of spring but are delicious year round.


Ingredients

  • 2 cups all-purpose flour , spooned and leveled
  • 1 tablespoon baking powder
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon kosher salt
  • zest from two lemons (about 2 tablespoons), divided
  • 6 tablespoons chilled unsalted butter , cut into small cubes
  • 1 cup fresh blueberries 
  • 3/4 cup half and half 

For The Glaze

  • 2 cups powdered sugar
  • 1/3 cup half and half
  • 1/2 teaspoon lemon juice
  • lemon zest


Mix flour baking powder, salt, lemon zest.

Blend in the cold butter. Once the butter is incorporated well, (I use my hands) add in blueberries and then the half and half. It will be sticky. Dump onto a floured cutting board form into a circle and cut in triangles. Transfer to a lined baking sheet and bake at 400 for 16-18 minutes. 


For Glaze

Combine ingredients and pour over baked scones.
