Italian Sausage Tortellini Soup

If you need to change up your soup game, this is your recipe. This is such a comfy and yummy soup. It’s creamy and savory and delicious!

We love soup when the weather gets cold. We love to have it during a good football game too. I’ve made this soup on the stovetop and then moved it to the crockpot to transport to a friend. 


Ingredients:

  • 16 oz Italian sausage 
  • 1 small diced Onion 
  • 2 Celery stocks chopped 
  • 3 teaspoons minced Garlic
  • Salt and pepper
  • 2 -3 Tablespoons Flour
  • 4 cups Chicken stock
  • 28 oz Canned petite tomatoes 
  • 1 pint Heavy cream
  • 1-2 teaspoons Italian seasoning
  • 2-3 cups Frozen or fresh cheese tortellini 
  • 1 bag of Fresh Spinach (6 oz. Bag)

Garnish with shredded or grated Parmesan 

Instructions:

On medium heat, brown sausage in a pot or Dutch oven and drain most of the grease. Remove sausage from pot and set aside. Leave a little grease in the pot and use it to brown the onion and celery on medium heat. Cook onion and celery for about 5 minutes. Add garlic. Add salt and pepper. Add flour and stir. Add chicken stock and canned tomatoes. Add heavy cream and Italian seasoning. Add tortellini and cooked sausage and allow to come to a light boil. Add spinach. Allow to cook about 5-10 minutes.

Tip: I usually use 2 -16 ounce packages of Italian sausage

Tip: I don’t like celery so I don’t use it 🤷‍♀️

We serve this soup with a warm French baguette and butter.
