Chilled Spinach Dip
I grew up with this snack at every Christmas Eve family gathering. I would never touch it. I knew I did not like spinach. Now I look back and think how many times I could have enjoyed this - LOL - I really missed out. I am not sure the year that I finally tried it but when I did I immediately fell in love with it. Again, is there a food I don't love? My secret to this recipe is BACON. I add a lot of BACON. My mom always used Bacos and that might be why I didn't like it back then. I'm not a fan of those things but if that is your thing, by all means, go for it. It would be easier but not yummier. 😉
Spinach Dip (chilled)
- 2 pkg frozen chopped spinach
- 2 c mayo
- 1/2 pound of cooked Bacon, crumbled
- small onion chopped
- can of water chestnuts
- 1 pkg dry onion soup mix (only half)
Thaw & squeeze out spinach. Make sure it doesn't have any water left in it. Chop an onion and a can of water chestnuts. Cook and crisp the bacon. Mix in the mayo and half of a packet of dried onion soup mix.
Mix all & chill.
Tip: I serve mine in a Hawaiian bread bowl
Tip: I use more bacon than what it calls for 🎉 🥓
