3-Bean Chili


New Year brings ALL the healthy stuff out and so if I’m being honest with you, I, too, am trying to eat healthier. My recipes might reflect that as well. This is one of my all-time-favorite recipes and a go-to recipe for years. For all the vegetarians, you can celebrate with this chili but if you know me, I cheat and added meat 😜. It’s lean but I do add a couple pounds of beef to this recipe. So, the meat is optional but if you have a husband or kids that think all meals need some meat, add the beef or do ground chicken or turkey. It finally got cold (really cold) here so I can make some chili today! 

What I love about this recipe are the unexpected flavors. The cilantro and the lime just make me smile! It’s chili with a southwest flair to it. The best part: you can make it in your crockpot! 

3-Bean Chili

2 pounds extra lean ground beef, browned

1 large onion, chopped 

1 clove garlic, fresh, minced 

30 oz black beans, rinsed and drained

30 oz kidney beans, rinsed and drained

30 oz pinto beans, rinsed and drained

30 oz canned diced tomatoes, with chilies

15 oz tomato sauce

1¼ oz Williams Chili seasoning packet

14 oz corn, frozen

1 -2 limes, juiced

½ cup cilantro, chopped




In a Crockpot combine cooked ground beef (optional) chopped onion, garlic, beans, tomatoes and sauce. Cook on low for 4-5 hours. (I put it in before I go to church on Sunday morning). Then add the frozen corn and let cook for 1 more hour. Add in Lime juice and cilantro before serving. 

Stovetop instructions: in a 7 Quart pot, brown your meat and season with salt and pepper. Add onion and garlic and continue to cook meat. Add tomatoes, sauce and beans. Cook on medium heat for 30 minutes. Add corn and continue to cook for 15-20 minutes. Add in Lime juice and cilantro before serving.

I made mine in my Dutch oven this time. It is super easy to make this in the slow cooker. 

1. Brown your meat (optional)

2. Chop onion and add onion and garlic


3. Add canned tomatoes and sauce


4. Drain beans and rinse. Add to pot.


Add seasoning packet


5. Chop cilantro and limes

Tip: buy already chopped cilantro 🎉


6. Garnish and enjoy


Tip: add avocado and tortilla strips
