Tiramisu Cups
Christmas parties are a blast but when you are the host, getting everything cut and served can take a while and get messy. These Tiramisu cups are perfect because it takes little effort to cup each dessert ahead of time and then serving is a cinch.
Tiramisu is a yummy combination of lady finger cookies, strong coffee flavor and a mascarpone sweet cream topped with cocoa.
Tiramisu Cups
- 5 egg yolks
- 1/2 cup sugar, divided
- 3/4 cup Marsala wine, divided
- 1 1/4 cup whipping cream
- 2 8oz mascarpone cheese
- 1 1/2 cups strong hot coffee or espresso
- 1 T vanilla
- 1 pkg lady fingers
- Cocoa powder for dusting
In a double boiler (don’t worry, I don’t have one of those either) Tip: I just use a medium size sauce pan (place water in it) and use the metal bowl from my Kitchen-aid mixer to fix on top or in it) place 5 egg yolks add 1/4 cup sugar. Whisk this together cooking until thick. Add 1/2 cup of the Marsala to this mixture. Using this double boiler process is important otherwise your egg yolks will curdle and turn to scrambled eggs. This is meant to be a slow process. The egg yolks, sugar and Marsala will thicken. Once thickened, place in a bowl with saran wrap on the top of the custard and place in the refrigerator to cool.
In a separate bowl mix up the mascarpone. With your Kitchen Aid, affix the whisk attachment (or use any an electric mixer). Add to your bowl: whipping cream and 1/4 cup sugar and mix until soft peaks. Add mascarpone and chilled egg yolk mixture (custard) to whipping cream and fold together. Refrigerate.
In a separate bowl, measure coffee/espresso, vanilla and the rest of the Marsala. Lay out 12 individual dessert cups. (I used something like these) Break lady fingers in half. Dip lady fingers in coffee mixture and place 2 halves in bottom of each cup.
Add a layer of cream and then a soaked ladyfinger again before adding another layer of cream.
Top with cocoa powder. Refrigerate for a few hours before serving. It should be served within 24 hours because Tiramisu doesn’t last much longer than that. It will start to break down.
